Pesto Vegan Sliders & Cheese-less Cheesy Fries

This was a fun one because it was kind of an experiment of cleaning out the fridge- blending everything together, and making a patty!

They definitely didn’t come out perfectly, but they were still pretty dang tasty- which is why I wanted to share them here.

Today’s post will share one of the best comfort food combos that’ a heck of a lot better than a store bought option. Say hello to your new favorite vegan and gluten free pesto slider and cheese-less cheesy fries recipe!

Pesto Vegan Sliders And Cheese-less Cheesy Fries

If you’re new to my blog, then first of all…welcome! Second of all, beware that I’m not a food blogger, okay?

That means I’m not big on measurements. It also means I like to offer recipes as suggestions, rather than requirements.

I do this so that you can get creative in the kitchen, work with local ingredients that make sense for you, and to welcome all kinds of diets.

While this recipe is vegan and gluten free, you can still do with it what you’d like. Meaning, you can make REAL burgers and add the pesto to it.

Heck, you can even put a slice of cheddar cheese on there.

Or, you can smother your fries with actual nacho cheese…or whatever cheese sauce you’re into, really.

Take a moment to check in with your body, your appetite, and your fridge so that you can make this recipe uniquely your own.

Whether you’re baking the fries on a baking sheet with nothing more than a dash of olive oil, salt, and pepper spread out on parchment paper, or if you’re using an air fryer for the real deal…this recipe will still hit home.

Don’t forget you can always opt for burger buns or dinner rolls if you’re not into the gluten free bun option!

Cheese-less Cheesy Fries

This made about 15 small, thin patties. As always, these are estimated amounts. I’m just not a measuring kind of cook, what can I say?

If you don’t already have Juice Pulp Crackers made, these can take up to 2 hours. Check out the recipe for those here

Otherwise, feel free to use any other bread of your choice.

1. Cut sweet potatoes into strips, and roast them in the oven at 375 degrees fahrenheit. . Potatoes for patties should be spiced with sal, black pepper, and smoked paprika.

2. Allow the fries to bake for about 40 minutes, flipping them every 20 minutes.

3. I already had left over roasted potatoes, so I used leftovers for the patties, and fresh ones for the fries. Add about 1 cup of roasted, soft sweet potatoes to a high powered blender.

4. On the stove, fry up 1/4 of white onion (or more if you like stronger onion flavor), and 2 large cloves of garlic with a bit of olive oil. Once they’re brown, then bring to a simmer to keep warm.

5. Grate about 3/4 of a large carrot with cheese grater. Add grated carrots and  1 1/2 cup of spinach to the blender.

6. Add 1 can of black beans (or equivalent amount of black beans not canned) to the blender.

7. Include about 1/4 cup of ground flax seed (this will help bind the mixture) to the blender

8. Add hemp seeds to your liking, and 1 heaping tablespoon of YouSuperFoods Skinny Protein and Super Green blends

9. Add warm onions and garlic to the blender

basket of onions

10. Include 2 tablespoons of Vegan Pesto to the blender.

11. Blend until the mixture is sticky. If it’s not sticky enough, then add more ground flax seed. This will bind the mixture.

12. I made small patties to ensure they cooked all the way through. Scoop with tablespoon onto a fry pan with a dash of olive oil, or any oil of your choice. Cook to your liking.

Cheese-less Fries:

1. As mentioned above, cut sweet potatoes into strips and roast in the oven with olive oil. Spice with salt and nutritional yeast. The nutritional yeast gives the fries a cheesy flavor, so add to your liking.

2. Roast can take around 40 minutes. Check after 20 minutes, to flip them.

3. Dip with Spice Up Your Life Sauce

Putting Burger Together:

As mentioned above, this is totally up to you in terms of what you want to top your’s with. I did a few different flavors that I’ll list below.

1. Spread Juice Pulp Cracker with dip of your choice. On separate crackers, I used the recipes for Hummus, Vegan Pesto and Spice Up Your Life

2. Add patty on top of cracker and spread. Option to add another, or the same, kind of spread again onto patty.

3. On patty I added tomato, avocado, spinach and sprouts. On another one, I used sauerkraut

4. Other great options here are pickles, vegan cheese, balsamic vinegar, and anything else you like to deck your burger out with!
