Almond Pulp Blender Cookies
If youβve been cooking with me in quarantine, then youβve been loving your Nama Well juicer too.
Which means, youβve also been making heaps of almond milk..
If thatβs the case, then I hope youβve been saving all that beautiful almond pulp!
Because weβre going to have some fun playing with it for the next few weeks.
This recipe was a βI need to use what I have and see what happensβ kinda thing.
And, hey- it worked!
Morning fancy, but delicious & nutritious nonetheless.
As usual- the Cured Nutrition Cinnamon & Honey blend made these little numbers extra incredible.
Ingredients
2 C almond pulp
3 Tbsp applesauce (click here to make your own)
1/2 C almond milk (click here to make your own)
Cacao nibs
Organic vanilla extract (no added sugar)
Cured Nutrition Honey & Cinnamon blend
Baking powder
Nutmeg
Instructions
1. Preheat the oven to 350 F.
2. Pour 2 C almond pulp, 3 Tbsp applesauce, 1/2 C almond milk, 1 tsp vanilla extract & 1 tsp baking powder into food processor or blender.
3. Spice with Cured Nutrition Cinnamon & Honey blend. If you donβt have it, just cinnamon. Add nutmeg to your liking.
4. Blend on low speed until mixture is sticky. You can keep it as chunky or creamy as you like it.
5. Add contents from blender to large mixing bowl & fold in cacao nibs to your liking.
6. I didnβt measure how much of the mixture I used for each cookie- but these amounts made 10 cookies for me.
7. Put parchment paper on a baking tray, and add cookies to the tray.
8. I cooked mine for 20 mins. But if you make bigger cookies, you might need to cook longer.
9. Let them cook & ENJOY!
