Chewy Almond Pulp Cookies
These are SO easy! Just a few simple ingredients, and voila- a delicious snack, desert, or freakinβ meal if thatβs what you wanna do.
Theyβre also great, because theyβre putting that almond pulp to good use- which always makes me happy.
I know I say it all the time, but Iβm doing my best to use as much of the plant/food product as possible in whatever Iβm making.
Iβm not at the zero-waste level, but Iβm working towards getting closer.
The best part about it is that you can make delicious options with what would otherwise be considered βscraps.β

Ingredients
1/2 C almond pulp (it makes a big difference to use high quality, organic almonds when making your milk! Also, click here to see my almond milk recipe)
1 heaping tablespoon cashew butter (or any nut butter)
1/4 C applesauce (click here to make your own)
1/8 C oat flour (you can play with another GF flour if you prefer)
Cacao nibs
Baking powder
Cinnamon
Sea salt
Instructions
This made 8 small-ish cookies for me. I was using the almond pulp in other recipes here and there, so I didnβt have a whole lot left. But feel free to use the entire amount from whatever you ran through the juicer.
Preheat the oven to 350 F.
Add all ingredients to a mixing bowl and spice as you like it with cinnamon and sea salt.
Make sure itβs evenly mixed.
Add to baking sheet (mine were about the size of heaping Tbsps).
Bake for roughly 20 mins.
